Trim off the fat and membrane from the kidneys; slice them in half and remove any white tissue in the center; cut into chunky dice.

Melt butter or lard in a large pot over medium heat. Add the diced kidney and steak; cook, stirring, until the beef is browned. Stir in the onions and season with salt, Worcestershire sauce, pepper, thyme, and the bay leaf. Stir in 1 1/2 cups water; simmer until the beef is almost tender, about 1 hour.

Roll out the pastry slightly larger than the top of the casserole dish; lay the pastry over the beef mixture, trimming to leave a 1-inch overhang on all sides. Fold the overhang under, flute it against the inside edge of the casserole, then cut several slits in the crust to let steam escape.
