- 1
Cook the chorizo in a large skillet over medium-high heat, stirring often, until it turns dark red, 6 to 8 minutes. Remove it from the skillet.
- 2
Melt the bacon grease in the same skillet over medium-high heat. Add the diced potatoes and cook, stirring occasionally, for 8 to 10 minutes.
- 3
Add the onion and serrano pepper; cook and stir until the potatoes are fork-tender, the onion is translucent, and the serrano pepper is soft, 2 to 6 minutes.
- 4
Add the eggs and chorizo; stir until cooked and fully mixed into the potato mixture, about 5 minutes. Season with salt and pepper.
- 5
Meanwhile, warm the tortillas in a large skillet or directly over the grates of a gas stove until soft and flexible.
- 6
Place 1/3 cup of the chorizo mixture down the center of a tortilla. Fold the top and bottom of the tortilla over the filling, then roll into a burrito shape. Mist with cooking spray and place in the air fryer basket. Repeat to make the remaining burritos.
- 7
Air-fry at 400 degrees F (200 degrees C) for 4 to 6 minutes.
- 8
Flip each burrito, mist with cooking spray, and air-fry until lightly browned, 2 to 4 minutes more.
