  1. 1

Steam globe artichokes in 2 cups of water until tender, about 45 minutes. Save the cooking liquid and set the artichokes aside until cool enough to handle.

  2. 2

Scrape the flesh from the bottom third of each leaf and add it to a medium soup pot along with the artichoke liquid.

  3. 3

Remove the fuzzy choke from each artichoke bottom and discard it.

  4. 4

Coarsely dice the artichoke bottoms and add them to the soup pot. Add chicken stock, vermouth, potato, carrot, onion, celery, garlic, bay leaves, and marjoram. Simmer until the vegetables are very tender and the liquid has reduced by 1/3, about 45 minutes.

  5. 5

Remove the bay leaves and puree the soup with an immersion blender until smooth.

  6. 6

Stir in the cream and cheese until just heated through. Season with salt and pepper to taste. Serve with croutons on top.

How easyChef Pro Scores This Recipe

easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.

The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.

Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.

Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
