    Mix soy sauce with 1 tablespoon cornstarch in a glass bowl or zip-top bag. Add chicken and stir to coat. Press out all air from the bag before sealing, or cover the bowl. Refrigerate for at least 30 minutes.

    Stir boiling water and bouillon granules together in another bowl until dissolved. Add the remaining cornstarch and the ginger, then stir to combine.

    Heat half of the canola oil and 1 tablespoon sesame oil to 365 degrees F (185 degrees C) in an electric skillet, or over medium-high heat in a heavy skillet. Add the broccoli, bell peppers, onion, and garlic. Stir-fry for 5 to 7 minutes, until crisp-tender. Using a slotted spoon, transfer them from the skillet to a serving dish.

    Heat the remaining canola oil and sesame oil in the same skillet to 365 degrees F (185 degrees C) or over medium-high heat. Add the chicken mixture and the crushed red pepper. Stir-fry for 7 to 10 minutes, until the chicken is no longer pink in the centers and the juices run clear. Return the vegetables to the skillet. Add the bouillon mixture. Stir until thickened. Stir in the optional almonds.
