- 1
Combine mint, orange juice, fresh oregano, olive oil, garlic cloves, lime juice, salt, cumin, paprika, pepper, ground oregano, and cayenne pepper in a blender, and blend until smooth.
- 2
Poke the pork all over with a small sharp knife and place it into a container just big enough to hold the meat; you can also use a resealable plastic bag.
- 3
Pour the marinade over and toss to coat. Spoon any excess marinade from the bottom of the container over the top of the meat before covering. Marinate in the refrigerator for 24 hours; you can go as few as 6 or as long as 48 hours.
- 4
Preheat the oven to 300 degrees F (150 degrees C).
- 5
Place the onions in a roasting pan and make a space in the middle. Set the pork in the pan, fat side up, and pour the marinade over the onions on each side. Add the water.
- 6
Transfer to the preheated oven and roast until the internal temperature reaches 190 to 195 degrees F (87 to 90 degrees C), about 5 hours. For best results, baste the pork occasionally with the pan liquids. Add more water if the pan gets too dry.
- 7
When the pork is done, remove it from the oven and cover with foil. Let it rest for 1 hour.
- 8
Serve by tearing the meat apart as for pulled pork, or by removing large chunks and slicing.

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
