Butter-Rich Almond Flour Bread (Grain-Free)

Butter-Rich Almond Flour Bread (Grain-Free) bakes up with a tender crumb and gentle richness from melted butter, while whipped egg whites keep each slice light and airy. It tastes pleasantly nutty and close to classic sandwich bread, making it perfect for toast at breakfast or as a base for lunchtime sandwiches. Serve it whenever you want a soft, sliceable grain-free loaf.

  1. 1

Separate the eggs by cracking each one into your hand, letting the whites fall into a bowl and placing the yolks in a second bowl.

  2. 2

Preheat the oven to 375 degrees F (190 degrees C). Butter a loaf pan and line the bottom with parchment paper.

  3. 3

Put the almond flour in a food processor. Add the baking powder, salt, and egg yolks, then pour in the melted butter. Pulse, scraping down the sides once or twice, until the mixture comes together.

  4. 4

Sprinkle the cream of tartar over the egg whites and whisk until soft peaks form. Transfer about 1/3 of the egg white mixture to the food processor and pulse on and off, scraping down with a spatula as needed, until well blended. Scrape this mixture into the bowl with the remaining egg whites, fold until well combined but still airy, and pour the batter into the prepared loaf pan.

  5. 5

Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, about 30 minutes.

  6. 6

Run a thin knife along the edge of the bread and let it rest for 10 minutes. Turn the bread out onto a wire rack and cool to room temperature before slicing.
