- 1
Fill a large pot with lightly salted water and bring it to a rolling boil. Stir in the manicotti and return to a boil. Cook the pasta uncovered, stirring occasionally, until slightly firm, about 8 minutes. Drain and spread on a baking sheet to cool. Place in the freezer until hardened, about 5 minutes.
- 2
Heat 1 tablespoon oil in a large saute pan over medium-high heat. Add the sausage, beef, and onion; saute for 3 minutes. Add the basil, rosemary, thyme, Italian seasoning, and black pepper. Cook until the meat is browned, about 8 minutes. Stir in 1/2 can tomato sauce and cook until heated through, 3 to 5 minutes. Transfer to a large bowl and set aside to cool.
- 3
Heat a skillet over medium-high heat for the sauce. Add the onion and saute for 1 minute. Add the remaining tomato sauce, rosemary, and thyme. Stir in the basil and red pepper flakes.
- 4
Fold the mozzarella cheese and cottage cheese into the cooled meat mixture. Stuff each manicotti shell with the meat mixture and place them back onto the baking sheet. Place the filled shells in the freezer to firm up, about 5 minutes. Slice the shells into bite-sized pieces.
- 5
Heat 2 quarts vegetable oil in a saucepan to 350 degrees F (175 degrees C).
- 6
Place the flour, bread crumbs, and beaten eggs each in a separate bowl. Dredge the manicotti slices in flour, then in eggs, and then in bread crumbs, and place them on the baking sheet.
- 7
Fry the slices in the hot oil until golden brown and crispy, about 5 minutes. Drain on a paper towel-lined plate. Serve with the spicy tomato dipping sauce.

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
