Mix the mustard, sesame oil, garlic, pepper, and maple syrup. Put the pork in a shallow dish and coat it well with the marinade. Cover and refrigerate for at least eight hours or overnight.

Take the pork out of the marinade and set it aside. Pour the remaining marinade into a small saucepan and cook on the stove over medium-low heat for 5 minutes.
