Speedy Weeknight White Chili

Speedy Weeknight White Chili is creamy and gently spiced, with tender ground pork, mellow onions, and smoky green chiles simmered in a savory chicken broth. Great Northern beans add heartiness while Monterey Jack melts in for a smooth, cheesy finish. Serve it on cool evenings or for a quick game-day dinner with warm tortillas or cornbread.

  1. 1

Place a large skillet over medium-high heat. Cook and stir the pork until browned and crumbly, 5 to 7 minutes. Drain and throw away the grease.

  2. 2

Warm the oil in a large stockpot over medium heat. Add the onions and garlic; cook, stirring, until the onions are translucent, about 5 minutes. Stir in the chiles, cumin, and oregano; cook and stir until fragrant, 2 to 3 minutes. Add the broth, the cooked pork, and the beans; bring to a boil. Lower the heat and simmer, uncovered, for 20 minutes.

  3. 3

Take off the heat and stir in the Monterey Jack until melted.
