Serendipity Bread

Serendipity Bread is a bread‑machine flatbread that finishes on the grill for a tender crumb with lightly charred edges. A brush of olive oil adds richness, while optional garlic powder and crumbled feta bring salty, aromatic pops of flavor. Serve warm for dinner alongside grilled meats, salads, or dips.

    Put the first set of ingredients into the bread machine pan in the order the manufacturer recommends. Choose the DOUGH cycle and press START. Do not add the olive oil, garlic powder, or feta cheese.

    Preheat an outdoor grill to medium heat. When the cycle finishes, turn the dough onto a lightly floured surface and divide it into 2 halves. Roll each half into a circle about 9 or 10 inches wide. Brush the top of each circle with olive oil.

    Set the bread circles on the grill with the oiled side down. Brush the other side with olive oil and watch closely. When the bottom is browned, flip the bread and grill the other side until golden. If you like, sprinkle with garlic powder and feta cheese.
