Shredded Pork Taco Filling
  1. 1

Mix cumin, coriander, oregano, garlic powder, and cayenne pepper in a bowl; rub the mixture thoroughly over the pork roast.

  2. 2

Put the roast in a pressure cooker; pour beef broth around the roast. Add the onion and bay leaves. Securely close the cooker and place the pressure regulator over the vent as directed by the manufacturer. Heat over medium-high until it reaches full pressure, with steam escaping steadily and making a whistling sound. Lower the heat to keep high pressure while the regulator rocks gently. Cook for 45 minutes.

  3. 3

Remove from heat and let the pressure release naturally, following the manufacturer's instructions. Unlock and remove the lid. Move the pork to a serving bowl; shred it with 2 forks.
