Warm the oil in a skillet over medium heat. Add 1/2 of the garlic and cook for 30 seconds. Transfer to the bottom of a slow cooker and mix in the tomatoes, oregano, and 3/4 teaspoon salt.

In a large bowl, combine the remaining garlic, the remaining salt, the turkey sausage, the ground turkey, the bread crumbs, the Parmesan cheese, the eggs, and the parsley. Mix with your hands and shape into 2-inch balls. Place them in the slow cooker. Spoon the tomato mixture over the meatballs.
