Stuffed Tomato Basil Chicken

    Place the chicken breasts on a flat work surface. Slice horizontally through the center, taking care not to cut all the way through. Open the two sides and lay them flat like a book. Put the chicken and marinade into a large resealable plastic bag, press out excess air, seal the bag, and refrigerate for 30 minutes.

    Preheat the oven to 500 degrees F (260 degrees C).

    Arrange the opened chicken breasts on a broiler pan. Place 4 basil leaves on one half of each breast, then add 2 to 3 tomato slices and 1 cheese slice on top. Fold the chicken to enclose the filling and secure with toothpicks if needed. Wrap 3 bacon slices around each chicken breast.

    Cook in the preheated oven for 15 minutes. Turn the chicken and cook for another 15 minutes. Remove from the oven, sprinkle the chicken with Parmesan, and continue cooking until the cheese melts, 2 to 3 minutes.
