Super Summer Grilled Bluefish

Super Summer Grilled Bluefish features firm, meaty fillets marinated in a bright trio of orange, lemon, and lime, then quickly seared over high heat for a smoky, citrus-forward finish. The subtle white wine and seafood rub add depth without overpowering the fish. Ideal for warm-weather cookouts, it’s light, zippy, and ready to serve hot off the grill.

  1. 1

Put the fish fillets in a large bowl. Add the orange juice, lime juice, lemon juice, olive oil, and white wine. Season with salt, pepper, and seafood rub. Stir to combine and coat the fish. Leave the squeezed lemon and lime halves in the bowl as well. Marinate for at least 30 minutes.

  2. 2

Preheat a grill to high heat. When it is hot, oil the grate.

  3. 3

Set the fish fillets on the grill and discard the marinade. Cook for 4 minutes per side, or until the fish flakes with a fork. Move to a serving platter, and remove the dark blue portion of the fish before serving.
