Classic Tater Tot Casserole
  1. 1

Preheat the oven to 400 degrees F (200 degrees C).

  2. 2

Place a large deep cast iron skillet over medium-high heat. Add olive oil and swirl to coat the skillet evenly. Add the onions in a single layer, then add the ground beef on top, breaking it into small pieces. Cook without stirring until the onions turn translucent, about 2 minutes. Stir the beef and onions together until combined, and continue cooking, stirring occasionally, until the beef is browned and cooked through, 3 to 4 minutes more.

  3. 3

Lower the heat to medium. Season the beef with garlic powder, onion powder, and black pepper. Cook, stirring often, for 1 more minute.

  4. 4

Remove from the heat. Add the cream of mushroom soup, green beans, and corn, and stir until everything is well combined.

  5. 5

Toss the tater tots with the seasoned salt in a bowl to combine. Arrange the tater tots decoratively over the beef mixture in the skillet, leaving no large gaps between them.

  6. 6

Bake in the preheated oven until the tater tots are golden and crisp, about 1 hour.

  7. 7

Sprinkle with cheese and scallions; cool for 10 minutes before serving.
