- 1
Crush the fennel seeds in a mortar until coarsely ground. Add the rosemary and crush for a few seconds until the rosemary is bruised and fragrant. Stir in the salt, black pepper, red pepper, and garlic powder.
- 2
Cut the ribs apart by slicing between each bone with a sharp knife. Press the ribs back together, sprinkle 1/3 of the rub mixture on the bottom (bone side) of the ribs, and rub it in firmly. Sprinkle the remaining rub on the meat side and press it in firmly.
- 3
Stack half of the ribs on top of the other half and place them into a resealable plastic bag. Squeeze out the air, seal tightly, and marinate in the refrigerator for at least 4 hours and up to 18 hours.
- 4
Before grilling, make the lemon garlic dressing. Crush the garlic and salt in a mortar, then stir or whisk in the rosemary, lemon juice, and olive oil.
- 5
Prepare a charcoal grill for medium-high heat. Grill the ribs, turning every 3 to 4 minutes to cook all sides, for about 20 to 30 minutes. An instant-read thermometer inserted into the thickest part of the meat and touching the bone should read 180 to 185 degrees F (82 to 85 degrees C). Let rest for 5 to 10 minutes.
- 6
Drizzle with the lemon garlic dressing to serve. When done, the meat will not be falling off the bone but should come off relatively cleanly when bitten. Serve with any remaining dressing on the side and fresh lemon wedges.

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
