Spicy Vegan Portobello Mushroom Jerky

    Put the mushroom slices into a resealable plastic bag. In a bowl, whisk the soy sauce, chili paste, rice vinegar, and sesame oil until fully combined. Pour the mixture over the mushrooms, seal the bag, and refrigerate for 8 hours.

    Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with parchment paper.

    Lay the mushroom slices on the baking sheet so they are not touching each other.

    Bake in the preheated oven for 1 hour. Turn the mushroom slices with tongs and bake for 1 more hour.
