Put the pork bones in a large pot and cover them with water. Bring to a boil over medium-high heat and keep at a rolling boil for 5 minutes. Drain the bones in a colander in the sink and rinse thoroughly until the water running over the bones is clear; this is the most important step.

Remove the lid and carefully lift out the inner pot. Strain the stock through a cheesecloth-lined colander set over a large saucepan. Set aside. Pick off any remaining meat from the bones and set it aside.

Season the strained broth with salt and pepper. Add the dashi and the remaining 1 cup water. Stir in the soy sauce. Bring the broth to a gentle boil over medium-low heat, then reduce to a simmer. Scoop out 1/3 cup of the broth into a bowl. Add the miso to the bowl and soften it with a spoon, dissolving it into the broth. Return this paste to the saucepan. Stir the paste into the broth until well combined. Add the spinach to the broth. Keep simmering for 10 minutes (do not let it boil).

Meanwhile, bring water to a boil in a pot. Add the ramen noodles and cook until soft, about 2 minutes. Drain and rinse, then place a generous handful in a serving bowl. Ladle the tonkotsu broth into the bowl. Top the noodles with the pulled meat from the bones and add the spinach.
