Put the carrot, onion, leek, celery, and pork knuckles into a large stockpot. Add the peppercorns and season with salt to taste. Pour in enough water to cover the vegetables. Cover and cook over medium heat for 2 to 3 hours, or until everything is tender. Take the knuckles out of the water and drain. Save the vegetables and cooking liquid.

Preheat the oven to 425 degrees F (220 degrees C). Melt the shortening in an enamel-coated cast-iron baking dish or pan. Put the drained pork knuckles, the cooked vegetables, and about 2 cups of the cooking liquid into the pan.

Bake for 30 minutes in the preheated oven. For the last 10 minutes, sprinkle with beer in which a good amount of salt has been dissolved. Lightly dust with cumin to boost the flavor. Serve with potato or white bread dumplings, or sauerkraut salad. In Bavaria, the cooking liquid and juices are strained and served as a sauce on the side.

How easyChef Pro Scores This Recipe
easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.
The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.
Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.
Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
