Simple Beef Tips and Noodles
  1. 1

Heat oil in a pressure cooker over medium-high heat and add the beef cubes, stirring. Cook until browned on all sides; remove the beef cubes and set them aside. Drain and discard the excess grease.

  2. 2

Reduce the heat to medium and add the onion; cook and stir until the onion is softened and translucent, about 5 minutes. Stir in the garlic and mushrooms and continue cooking until the garlic is fragrant but not browned, about 5 more minutes.

  3. 3

Pour in the beef stock, the beef cubes, and any accumulated drippings; season with salt and pepper. Return to high heat, seal the lid, and bring to full pressure.

  4. 4

Lower the heat to low, keeping full pressure, and cook for 20 minutes.

  5. 5

While the stew cooks, bring a large pot of lightly salted water to a boil. Add the noodles; cook, stirring often, until tender, about 8 minutes. Drain and set aside.

  6. 6

Remove the pressure cooker from the heat and let the pressure drop naturally. Dissolve the cornstarch in 1/2 cup cold water. When the pressure has dropped, remove the lid and whisk in the cornstarch mixture.

  7. 7

Return the beef and mushrooms to a boil; cook, stirring constantly, until the sauce thickens, about 2 minutes. Pour the beef over the noodles and serve.
