    Assemble all ingredients. Set up an outdoor grill for indirect medium-high heat.

    Remove and throw away the giblets. Rinse the turkey and pat it dry. Fold the wings back to secure the neck skin. Tuck the legs back into place.

    Brush the turkey with oil. Season the inside and outside with Italian seasoning, salt, and pepper. Set the turkey, breast-side up, on a metal grate inside a large roasting pan.
